Aretha's Summerplace Salad


This is sure some FREE FOOD. This recipe credits go to May's issues of People Magazine.

ARETHA'S SUMMERPLACE SALAD
1 (6.5 oz) bag butter lettuce
1 ripe tomato, diced or sliced
1-2 tbsp. diced red onion
1 large ripe peach, sliced, or 6 slices canned peaches in light syrup, drained
2 tbsp. raisins
2 tbsp. chipped unsalted cashews
1 broiled or grilled chicken breast cut into thin strips
1/2 lemon

DRESSING:
2 TBSP. light mayonnaise
4 tbsp. ketchup
Dash of garlic powder, to taste
Dash of seasoning salt, to taste
Dash of black pepper, to taste

1. Arrange salad ingredients, except for lemon, in a bowl. Squeeze lemon over salad. Chill for 15 minutes.

2. Mix the dressing ingredients. Pour over chilled salad. Toss, then serve.
